Sweet & Saucy Meatballs

Meatballs:
2 lb ground beef
½ cup onion (diced)
1 cup bread crumbs
2 tbsp parsley (dry)
1 tsp garlic powder
1 tsp curry powder
½ tsp pepper
2 eggs
1 ½ cups milk

Sauce:
½ cup brown sugar
1 tsp salt
1 ½ tbsp cornstarch
½ cup white vinegar
2 tbsp soy sauce
2 (16 oz cans) pineapple tidbits

To make meatballs; in a large bowl combine all ingredients.

Mix well.

Form 1″ sized meatballs with the mixture. (A full batch of this recipe will give you approx. 80 meatballs) Place meatballs on a greased pan.

Pre-heat oven to 350 degrees. Cook meatballs for approx. 30 minutes.

*As you near the end of the cooking time, you can turn on the broiler to help crisp up the outsides of the meatballs

While the meatballs are cooking, make your sauce.

In a sauce pot, combine brown sugar, salt, and cornstarch. Mix well.

Stir in vinegar and soy sauce. Add the juice from the cans of pineapple.

Heat sauce to a light boil and allow to simmer until thickened. Once thickened, add the pineapple tidbits

Place meatballs and pan drippings into a slow-cooker; that is set at low heat. Pour sauce and pineapple over the meatballs.

Slow cook for at least one hour (I recommend 2-3 hours) on low temperature, to help all the flavours blend together.

You can serve these over rice, as a side dish, or place on a hoagie roll with some Havarti or Jack Cheese
