Hail CAESAR!! Pork Caesar Burgers That Is


Pork Caesar Burgers Moist and garlicky burgers topped with Caesar dressing and some BLT.

Preparation Time: 5 minutes
Cooking Time: 8 to 10 minutes
Servings: 4
Ingredients:
•1 cup (250 mL) seasoned whole grain croutons
•1 lb (500 kg) ground lean Ontario Pork•
1/4 cup (50 mL) low-fat creamy Caesar salad dressing
•2 tbsp (25 mL) each grated cheese and finely minced Ontario Onion
•4 whole grain burger buns, cut in half horizontally
•4 slices Ontario Bacon, cooked and drained on paper towel
•4 large Ontario Lettuce leaves
•1 large Ontario Tomato, sliced

Preparation:
Place croutons in a zipper-lock bag and crush finely. In a large bowl, lightly mix together crumbs, pork, 2 tbsp (25 mL) of the Caesar dressing, cheese and onion. Form into four 3/4 inch (2 cm) thick patties.

Pre-heat barbecue to medium heat. Place patties on greased grill. Grill 4 to 5 minutes on each side, until no longer pink in the centre and digital thermometer inserted sideways into the centre reads 160°F (71°C). Place patties on bottom halves of buns, top with remaining Caesar dressing, bacon slices, lettuce leaves, tomato slices and bun tops.

Super Salmon Marinade Just in time for Canada Day

A good salmon marinade compliments the flavor of the salmon. Salmon can hold its own in the flavor department.

This recipe for smoked salmon chardonnay is light and refreshing. A good chardonnay wine has an herbal quality, and that, combined with the hint of dill adds a nice touch to this smoked salmon recipe.

Since the success of this recipe depends on the flavor and aroma of the salmon, buying high quality, fresh fillets is extremely important. I recommend fresh King or Sockeye fillets for this recipe, if available. The rich flavor of these species will be enhanced by this marinade.


Smoked Salmon Chardonnay
Ingredients 2 pounds salmon fillets
1/2 cup Chardonnay wine
1/4 cup light vegetable oil
1/2 tsp Kosher salt
1/2 tsp dried dill weed
1/4 tsp white pepper

Mix all of the ingredients well, and at least one hour before adding to salmon so the flavors will blend. Make sure to keep this fish marinade refrigerated at all times. Add the chilled Chardonnay marinade to the salmon fillets. You can marinate the fish a plastic, glass, or stainless container. Don't use aluminum...the marinade will react with the acids in the marinade, and the salmon will end up having a metallic taste. I marinate salmon in plastic food storage bags.

Marinate the salmon for at least two, but no more than four hours. Always marinate salmon in the refrigerator. When finished, remove the salmon onto a rack, allowing it to drain for ten minutes.

Smoke the salmon with apple wood, serve it hot off the smoker, with a glass of chilled Chardonnay…if there's any left! Or you may rather save the remaining wine for another batch of salmon marinade! Enjoy!

Hamburger Seasoning Recipe


A good hamburger seasoning recipe is sure to add a great deal of zest to your hamburger: your guests will be wondering why your hamburgers taste better than anyone else’s. The following recipes require that you mix them with one to one and one-half pounds of hamburger prior to forming the hamburger meat into patties.

I am a dork....for Pork

There are lots of pork cuts that can be smoked. Pork loins and tenderloins, shoulders and shanks, fresh hams and picnics, pork chops and steaks; all are great cooked in the meat smoker. You might even try smoking up a batch of neck bones sometime. I did, and they're pretty tasty. You have to work to eat 'em, but they do taste good!

Gimme an "M" for Marinades!!

A marinade is a mixture of various liquids, herbs, spices and other flavorings that's used to improve the flavor and texture of meats, poultry and seafood. Common ingredients include:
  • Vinegar, citrus juice, or some other acidic liquid
  • Oil, either neutral or something with flavor like extra-virgin olive oil, hazelnut oil or sesame oil
  • Prepared condiments...various mustards or sauces
  • Alcoholic beverages, from beers to wines to spirits
  • Fresh herbs, fresh veggies, garlic, fresh fruit
  • Dried herbs, spices and seasonings; salt of some kind - sea salt, flavored salt, kosher salt, pickling salt...just about any salt but iodized table salt
  • Sweeteners, including cane sugars and various syrups
Just about anything with flavor is fair game as a marinade ingredient.

Smoking Chicken Breasts

This can be done is a few easy steps.
  • Buy a family pack of bone in chicken breast halves.
  • Remove the skin, rinse in cold water, and pat dry.
  • Season with a mild dry rub seasoning
    • 2 tablespoons sweet paprika
    • 2 tablespoons onion powder
    • 1 tablespoon salt
    • 1 teaspoon black pepper
    • 1 teaspoon sugar
  • Preheat the smoker to 225 degrees and add some applewood for smoke.
  • Place the chicken breasts in the smoker, bone side down.
  • Remove the chicken breasts when the internal temperature reaches 160 degrees. No more, no less. Let them rest for 10 minutes before serving.
